Chipotle Axelotl (aka Julian)<p>Cooked a new and quite delicious curry recipe - Vadouvan Chicken. This was created in the French colony of Puducherry, and is a mix of Indian and French flavours.</p><p>Vadouvan is a spice mix of typical Indian spices, fried with fresh shallots and garlic and then baked until almost dry. A bit of a labour of love; available from good spice stores.</p><p>I didn't particularly follow any recipe. I coated chicken breasts in Vadouvan, fried, added garlic and chilli, then made a sauce with more Vadouvan, coconut milk and red wine.
